The Holiday madness is in full swing! I swear it gets crazier and faster every year. One of these years, I’m literally going to run out time for my Holiday baking! Don’t worry, I won’t really let that happen. I promise! Speaking of Holiday baking, here is a recipe that is bound to become a new staple in your household! Happy Holiday baking!
Stir the cinnamon-sugar mixture together and set aside. Preheat oven to 350 and line two baking sheets. In a large bowl, mix the butter, and sugars together. Follow with the molasses.
Mix in the egg and vanilla extract.
In a separate bowl, stir the dry ingredients together. Gradually add to wet mixture.
Roll dough into 1.5 Tablespoon sized balls.
Dredge each dough ball in the cinnamon-sugar mixture and place on baking sheet.
Bake for 10-12 minutes (Be careful not to over bake)
While cookies cool, prepare cream cheese icing, by creaming the butter and cream cheese together. Add in powdered sugar one cup at a time, mixing well after each addition. Follow with vanilla. Mix on high for 2-5 minutes until light and fluffy.
Spread an even layer of icing on the bottom of one of the cookies. Top with another cookie. Repeat with remaining cookies
