Do you have any recipes that stand the test of time? Are there any that take right back to the first time you tried them? For me, 7 layer bars are a beloved nostalgic treat. They are great any time of year and serve a pretty large crowd. I always remember having them at family reunions and other social gatherings. If they were being served, I was always taking one of two. What can I say? Sugar has always been the first thing I look for when I enter a party! 😉
To make things fun and festive for the Holidays, I thought I would put a fun spin on these classic bars! Instead of the classic graham cracker or shortbread crust, they have a gingerbread crust. The addition of cranberries really pack in the Holiday flavor. Although these bars have one less layer than the classic (sans dark chocolate layer), they might even be better than the original! If you are looking for something to bake and share, they make a perfect Holiday gift and are a definite crowd pleaser! They also serve well with Holiday cocktails.
Preheat oven to 350 and line a 9x13in baking dish with nonstick foil. Set aside.
In a large bowl, stir the cookie mix, egg, water, and butter together.
Press into the bottom of the pan and bake for 13-15 min.
Sprinkle cranberries, white chocolate chips, and pecans over crust
Pour sweetened condensed milk over toppings
Sprinkle coconut over sweetened condensed milk
Return to the oven and continue baking for 17 to 20 min. Allow them to cool completely in pan for about 3 hours.
Cut into bars and serve
