Who doesn’t love brunch?! Seriously, I have yet to meet a person who doesn’t like it. Even my dad loves it, and he’s pretty much the pickiest eater ever! Brunch is a meal that pleases all tastes. I’m not going to lie, I am always going to opt for a sweet dish over a savory one. But if I’m joining someone else, love to split dishes and have a little of each.
If you have a brunch sweet tooth, I have a dish for you. Calling it a meal might be a bit of a stretch, but nonetheless, it’s a treat. It may not be your every Sunday morning meal, but it’s perfect for special occasions, especially birthdays. It also makes a great late night snack! It has all the flavor of a brownie sundae packed into a stack of pancakes. If you want to make them every morning for breakfast, that’s totally fine. I promise I won’t tell anyone! 😉 Enjoy!
Combine milk and vinegar together. Let sit for 5 min.
Heat a pan or griddle at medium heat. Grease with oil. Combine the brownie mix, flour, eggs, milk mixture, and vegetable oil. Stir until no more clumps remain. Set batter aside to thicken.
Combine glaze ingredients together. Set aside
Scoop or pour circles of batter onto the pan/griddle.
Once most of the surface bubbles have popped, flip over and cook the other side until lightly golden.
Repeat with remaining batter.
Plate a stack of pancakes and top with glaze. Follow with whipped cream and sprinkles
