It all began three years ago. The first time I ever laid hands on a cookie from Insomnia Cookies (in Manhattan), I was instantly hooked. Their deluxe cookies blew my mind. They had so much flavor and texture. More than I had ever experienced in a cookie before.
When I moved back to Colorado, I was left dreaming of those magical cookies. It would be another two years until I would have them again when they opened a store in Boulder. Ever since then I’ve been imagining how I could replicate their S’mores Cookie. It has the fudgy texture of a brownie. It has an added crunch and gooeyness from graham cracker pieces and marshmallows.
The only way I could find to achieve the fudginess of that cookie was to use a brownie mix and pudding mix. The pudding mix contains corn starch which adds a unique softness to the cookies. To amp up the marshmallow flavor, I added a marshmallow flavor oil. It really brings home that campfire s’more flavor. I hope this recipe brings you the same feelings that I had when trying my first cookie from Insomnia!
Line a baking sheet with parchment paper and preheat oven to 350 degrees. Stir flour the pudding mix, flour, butter, and brownie mix together.
Stir in the eggs and marshmallow flavoring. Mix until smooth.
Stir in chocolate chunks and graham crackers.
Using a large cookie scoop, scoop 6 large even cookie mounds. fill each one with a marshmallow or two. Press down slightly onto baking sheet.
Bake for 12-14 minutes or until edges a crispy and marshmallows are bubbly. Allow them to cool for a couple of minutes before serving.
