Peanut Butter Pillow Cookies

I hope you all had a great Christmas and New Years! Mine was really nice. I got to go back home to Colorado and visit my family and other favorite Maltese. My little Brooklyn got to experience her first Christmas, and she loved it.
I’ve got a great new recipe for you! If you love chocolate and peanut butter, then you will love this recipe. The cookies are pillowy and soft and the filling is rich and creamy. They start with a cake mix, so they don’t take long to make. And everyone will be begging you for the recipe.


Preheat oven to 375ºF and line a baking sheet with parchment paper.

  In a large bowl, Stir together the cake mix, water, and 3/4 cup of peanut butter.

Add in the eggs

Add vanilla, and continue stirring until smooth.

Stir in the chocolate chips.

Scoop dough balls using a mini cookie scooper. Bake for 8-9 minutes or until cookies are puffy.

Allow them to cool while you are preparing the filling.


Stir cup of peanut butter confectioner’s sugar.


Stir in the water/milk

Scoop into a piping bag.Gently press the tip into the bottom of a cookie, while filling a fair amount of filling into the cookie.

Repeat with remaining cookies.
