Cake Batter Popcorn

Why is that whenever food claims to have cake batter in it, it suddenly has a magic quality? Maybe it’s just me because I fall for it every time. You may have seen the birthday cake caramels that I posted on Instagram for my birthday. I’m not going to lie, I literally bought those just because they were birthday cake flavored. I am the same way with sprinkles. If it has sprinkles in it, I’ll take it. I’m kind of childlike in that way.
This popcorn is my way of paying homage to the glorious wonder that is cake batter. This popcorn is much gooier than the other cake batter popcorn recipes are going around. It has melted marshmallows, which makes it a little more like a rice crispy treat. Either way, it is pretty addicting. The best part is it has vanilla cake mix in it. Need I say more? You can use store bought popcorn like I did. I chose to use Skinny Pop, which makes this snack pretty much an oxy moron. It not a skinny recipe by any means.
It is however, a really quick snack, that does not require any baking whatsoever. That is pretty epic when you are experiencing daily 100-degree weather. Sprinkles are optional, but are highly recommended! Have fun with the recipe. It can easily be tweaked to suit your personal taste.
Place butter and oil in a pan, and allow butter to melt at medium heat.
Add Marshmallows, and stir until they are completely melted.
 Remove from heat and stir in cake mix.
 Add in vanilla extract
Place popcorn in a bowl, and pour in marshmallow mixture.
(This may need to be down in batches)
 Stir with a spatula or hands, to coat all of the popcorn.
Lay out on wax paper.
 Top with sprinkles (if desired), and allow popcorn to set.
