Vanilla Melting Moments Cookies with Strawberry Buttercream Icing

I have a confession to make. I have a terrible sense of direction. Seriously, I do. Every time I come out of a building, I am automatically turned around. No matter how long I spend in a city, I cannot seem to learn my way around. You should see me try to navigate the Metro in Europe! I literally cannot figure it out.
My sister on the other-hand can be anywhere in the world, and she can easily find her way around. It is pretty impressive. It also helps that she has lived in plenty of foreign countries. I guess we all have our gifts, let’s just navigating definitely is not one of mine.
Speaking of foreign countries, have you ever tried a melting moments cookie? If you haven’t they are like the Australian version of Russian tea cookies and Mexican wedding cookies, minus the powdered sugar. Instead, they are sandwiched with a buttercream frosting. I decided to make an easy strawberry buttercream, using strawberry jam. It is great, especially when fresh strawberries are not in season.
These cookies have a crumbly texture, that melts in your mouth (hence the name). They are firm yet soft at the same time. It is important not to overbake them, or they will lose their airy texture.

(Makes about 12 cookie sandwiches)

Preheat oven to 325 degrees, and line a baking sheet
with parchment paper.
Cream together butter and confectioner’s sugar.
Mix in vanilla extract
In a separate bowl, sift flour and cornstarch together.
Stir in flour (in two additions)
Use a small scooper to make teaspoon sized scoops. Roll into balls.
Place cookies 1 inch apart. Press down softly on each dough ball with
the end of a fork. Bake for 15 minutes.
Transfer baked cookies to a wire rack.
 While cookies cool, prepare frosting by creaming butter
for about 3 minutes, or until light and fluffy.
 Add sifted confectioner’s sugar, milk, and strawberry jam.
 Put prepared icing in a piping bag with a round tip. (You can also use a
ziplock bag, and cut the bottom for piping.
 Pipe Icing onto one of the cookies
 Top with another cookie, to create a sandwich
 Serve and enjoy!
